Dolidze was born on July 16, 1988, in Tbilisi, Georgia. He grew up in a family that valued physical fitness and combat sports, and he began training in wrestling and sambo at a young age. These early experiences laid the foundation for his eventual career in MMA.
Roman began his professional MMA career in 2015 and compiled an undefeated record of 7-0 before being signed by the UFC in 2020. He made his promotional debut at UFC 252, where he defeated Khadis Ibragimov via TKO in the first round.
